2021 Good Times Rye “Honey” | 6-year old Rye Whiskey Finished in a Honey Cask MGP | 115.0°

  Nose: An immediate spiciness with a backdrop of sweet grassiness. It reminds me of some morning dew that has some flavors from the earth.   The spice continues on to sizzle the nose hair along the way.     Palate:   A very upfront sweetness with the backdrop of rye characteristics. A little sweet but not overwhelming that still leaves a lot of provide for the grassiness to demonstrate it’s profile.   The heat comes and can be a little overwhelming to the profile - leaving the item a little unbalanced.          Verdict:   It started ok, I was worried that the honey barrel would make it overly sweet, but that seems to be just right to combine with the rye profile.   The heat was overwhelming – taking away from the enjoyment of the flavor there.

2021 Ladies Man Derby | 7.5-year old Rye Whiskey Finished in a French Cognac Cask MGP | 111.0°   Nose: A slight spice in the front intertwined with a little bit of sweetness. There is a smell that reminds me of rice that has just been cooked – the smell when you open the cooker immediately after the rice is ready.   A soft sweetness to follow with a slight yellow-green hue that reminds me of meandering through a park.   The spiciness seems to peak more and more as you return for the second or third nosing.   Palate:   A lot of front in sweetness with the rye characteristics to the back.   The palate is deeper than I thought it would be.   A warm heat rises from it.   A taste the reminds me of hay, notes of farm life characteristics.   An intermingling of sweetness and spiciness that is more balanced than thought.   A raspberry-like finish to end cap it off.   It reminds me of drinking a refined red wine that seems to e...

  Nose: A light sweetness with an immediate spice to the nose with a soft backdrop of clouded in a mist of dense air.   Notes of earthiness remind me of my wife’s garden – for some reason, green onion flashes briefly across my mind.   This item exhibits more of a spice than one may expect.     Palate: A vibrant flavor with an ebullient feel – reminds me of bubbles rising as you open a bottle of soda. Some element of sweetness but much less of it than one may expect - not as many oak characteristics for an item that was finished in a second barrel.   I have always felt that a good bit of the flavor one gets from the bourbon is from the wood, the more time bourbon gets to go in, and out of the wood, the depth usually is amplified – that wood, in turn, is really reflecting trace elements from the soil that have feed it all this time.   Some elements of sweetness but are masked by a sense of leather, tannic bitterness that dominates the profile. ...
